Hibernation is in order if this weather doesn’t improve. With no inspiration for tea, I’m cooking jacket potatoes. With lots of butter, salt and pepper and some grated cheese, this is our dinner tonight. Sorry to disappoint.
Earlier in the day I made date, walnut and ginger cookies to have for dessert. These are really delicious so please give them a try. Recipe is below and tell me what you think.
In a food processor (or by hand), put 120g plain flour, 80g sugar, 1 tablespoon cornflour, 1teaspoon bicarbonate of soda, and 60g porridge oats. Briefly mix. Add 90g of soft butter and mix to form fine breadcrumbs. Next add 120g dates, 50g walnuts and 60g grated glacé ginger. Mix again till the dates and walnuts are chopped into the flour mixture. If you are doing this by hand then chop the dates and walnuts and add to the flour mixture. Finally add 1 egg and mix lightly to form a sticky dough. Put heaped tablespoons of this mixture onto greased baking sheets and cook at 180’c for 8-10 minutes till golden round the edges but not too golden or they loose their chewy texture. Enjoy xxx
