An abundance of mushrooms!

Homemade mushroom soup with crusty roll for dinner tonight. 

Saute onions until golden, add loads of mushroom and a chopped leek and fry till soft. Add 2 heaped tbs of flour and cook for a minute. Gradually add stock, water, milk and a splash of cream and cook slowly for 10 mins till thick and unctuous. Sprinkle over a few chopped fresh herbs(I used parsley and thyme), salt and pepper. Serve.

   
Also I found a new recipe to try out. It’s called baked breakfast oats. It’s meant to be a delicious breakfast that can be cut into slices and then either reheated in microwave or fried in a little butter till crispy or just eaten at room temperature.

I am subjecting this to Neill to eat for breakfast tomorrow as he is always out of the house at some crazy time in the morning(usually without breakfast).

It is the easiest recipe.

Put two cups of any chopped, frozen, fresh or dried fruit in the bottom of a well buttered large dish(I used chopped apple and frozen blackberries). Add two cups of dried ingredients of which three quarters are rolled oats-I used some chopped almonds, sunflower and pumpkin seeds as well as oats. The dried ingredients have to be sprinkled over the fruit without stirring or mixing..

Finally in a large mixing jug, pour two cups of milk, one egg and two tablespoons of something sweet(I used maple syrup)-whisk this all together and then pour over the oat mixture. Do not mix! Just place in oven at 180’c and bake till golden all over the top. Cut into 8 squares once cool. I hope it’s tasty..I will tell you tomorrow.

I may have just tried a sneaky piece of this, for quality control purposes of course, and it’s rather nice.
