Happy Easter Saturday everyone . Tonight’s din din’s is a homemade curry called chicken Chettinad with coconut pilau rice. Delicious.
It is a bit of a faf making your own curry from scratch but sometimes, when you have more time, it is worth it as it is quite fun to do and isn’t greasy like some bought curries.
A very dodgy looking photo-the left hand of the recipe is the curry paste that has to be fried off before adding all the other ingredients on the right hand side. If you want the curry sauce recipe, it’s below and makes a large quantity that you need to divide up and freeze in portion. If you don’t have time to make the curry sauce then add a finely chopped onion, half tin of chopped tomatoes and a large clove of garlic to your curry.
