
The first barbecue of the year is our Sunday dinner. Stuff lots of herbs and onion in the cavity and roast for 1-1.5 hours depending on the size of the bird. Don’t open the bbq until at least an hour is passed or the heat starts to reduce.
Par boil potatoes and put them under the chicken whilst its cooking for delicious roasties that are flavoured with the chicken fat and bbq smoke too.
