
- My chopping board tonight!
- This morning was the first of the year where the sun was rising as I walked our greyhound. A lovely crisp, fresh day. As usual my mind turned to food. What could we have for dinner tonight?
- What sprung to mind was a packet of puy lentils with sundried tomatoes and basil that is still sitting on the shelf in my larder.
- Later I fried red onions in butter till they were soft and caramelised, adding chesnut mushrooms and garlic and then stock(a cube I’m afraid). Followed by the puy lentils and a little flour to thicken the sauce, I tipped this glorious mixture into a dish and topped it with creamy mash made with celeriac and sweet potato and lots of black pepper and salt. A swift grating of mature chedder and then into a hot oven for half an hour until bubbling.
- One satisfied family and quite a smug me for producing a veggie dish that everyone liked.

- Leftovers never look great!

It was delicious!
