Mexican fish tacos

Tonight’s din dins is based on a Jamie Oliver recipe that I saw the other day.

Three sauces, yes three! Homemade guacamole, caramelised pineapple salsa and roasted garlic sour cream(sorry Neill).

To go with this, pan fried salmon, black eyed beans(pre cooked) and mixed leaves with coriander and roasted red pepper.

All wrapped together in a warmed flat bread.

Delicious. Will do this one again!

    So Neill bragged about these and as a result I had fish tacos on the brain for about a week until I finally got around to making them! Did a slight variation with chipotle-garlic Mayo/sour cream and tilapia as oppose to salmon. It was delicious! Thanks for the inspiration.

    1. Glad I inspired you. The great thing about recipes is being able to adapt them. I loved this recipe as did Neill and Henry. Will be making them again this week but was wondering about prawns instead.
